I know it's really hard to quantify but how are you impressed with quality, off-road ability, overall cool to drive etc? I realize it's not a hard-core off-roader, I'm more interested in a weekend exploring dirt-roads type rig, that has decent off-road capability and possible handle a winch mount, etc.
Quality wise, Ford did a good job on this SUV. It got nice road manners. The 2.0L is surprisingly quick, but it’s not a race car.
For hard packed dirt roads, you can drive it off the lot and feel confident on a dirt road. If you plan on going through any real mud or loose dirt, you would want to ditch the street tires and go with something a little more aggressive.
As far as a winch mount???? I don’t know. As of right now, I don’t know of anything aftermarket that would fit... but it’s still fairly new.

How is the rear visibility? Lot's of blind spots/ hard to see out the back window?
Is it easy to get in and out of?

Rear visibility sucks. What do you expect? The window is about 12” tall.... ok, it’s not really that bad. I’d say it typical for any current small SUV. And it has a backup camera (I know a lot of people don’t “need” that, but consider it just another weapon in your arsenal.) and the side mirrors are a little bigger and stick out a little more than the aerodynamic ones found on most small SUV. That helps.
Entry and exit are easy, even when my knee is hurting. It’s a good height to just step in or out. I’m 5’10” with shorter legs and a longer torso. There’s good headroom, but I find the armrests to be awkward. The center console/armrest is low and I find myself leaning toward the center of the vehicle.
The seats are comfortable, but we have the Badlands w/ the Badlands Luxury package (the leather/suede seats) so I’m not sure about the other seats.
I’ll have to check on the fuel mileage, but my wife works from home so this doesn’t have many miles yet.

I find the seats in all trim levels to be very comfortable as long as you have power adjustment. The manual adjust ones are not the right height for me and no amount of messing around with the front to back and recline seems to overcome that. But even a Big Bend with power seats allows you to dial in the adjustment so the seats are very comfortable.
If the drive line is anything like my CR-Vs, you will be surprised how far you can go with them. The platform and the FWD based driveline is a limitation but not as limiting as one would think as long as you have some decent tires on it. I'm sure the manual will mention something about light off roading but if you know what you are doing, it should be able to tackle a maintained of fire road.
